Thirty-something Neapolitan Fabio Silva, Executive Chef of the Derby Grill since 2011, has received the praise of the best restaurant guides. He combines his love of Italian and regional cuisine with a great interest in new trends and a passionate research into the use of local raw ingredients.

He’s one of the pillars of the Hotel de La Ville in Monza. Roberto Brioschi, Restaurant Manager, has worked at the Derby Grill for thirty years. His distinctive traits: professional expertise, a master of languages and warm, spontaneous kindness.
